After a thoughtful refresh, Soluna, part of Aqualand’s hospitality arm, Etymon returns with a renewed energy and a distinct Italian influence. The interiors have been refreshed, the menu redefined — yet the soul remains unchanged.

Inspired by the way LA embraced Italian cuisine and made it its own, this next chapter sees Soluna embracing a Mediterranean spirit, with an Italian-influenced menu led by the Soluna team and a newly appointed master pizzaiolo, Alberto Cacciatore.

Alberto, an Italian native recently returning to Sydney from Italy and New York (overseeing pizza making at Rossopomodoro at Eataly), brings his Italian expertise to our wood-fired oven. His sourdough starter — a living legacy — creates crusts with that perfect balance of tradition and innovation.
